Chiapas sits at Mexico's southern edge against the Guatemalan border and, with Oaxaca, accounts for most of what the world's eighth-largest coffee producer grows. Up in the highlands it is almost entirely smallholder work — families, many descended from the region's indigenous communities, planting, picking, and processing by hand. Panelita takes its name from panela, unrefined cane sugar, and drinks like it: butterscotch and dark chocolate with a warm spice edge. Certified organic. Four to six days off roast.
