2026 harvest, picked across February and March. Finca Soledad runs 120 hectares of biodynamic cloud forest along the Intag River, and only a small share of it grows coffee — the rest is left to reforest. The processing is unhurried in the same way: cherries sealed and fermented cold for two days, depulped and fermented dry for two more, then dried slowly over a month. What comes out is dark berry and stone fruit with a clean floral lift. Worth resting a full two weeks off roast.
