An Ethiosar lot from the Rodriguez family in Caranavi, and the drying approach is the whole story: fermentation is skipped entirely and the cherries are dehydrated under constant airflow to lock in sugar. What comes out is exceptionally sweet but remarkably clean — strawberry jam, a nutty amaretto sweetness, and dark plum on the finish.
