Ombligon takes its name from the Spanish ombligo — belly button — for the dimple in the bean, and it's grown almost nowhere outside Colombia's Huila region. Scarcity is part of the story, but the cup is the reason it keeps turning up on competition tables: Australian Barista Champion Jack Simpson took third at the 2023 World Barista Championship on Ombligon from this same farm.
Finca El Diviso runs it through a thermal shock natural, and the result is loud in the best way — concord grape and Dr Pepper up front, with a licorice twist that lingers. Blendin roasts it medium-light for both filter and espresso.
