A one-hundred-and-twenty-hour straight fermentation, no wash, no co-fermenting, from a long-time discovery of Ronal Carranza's farm, Guardian Del Bosque, in Western Peru. A surprisingly clean gesha when brewed, that gets bombed by a real, vibrant blueberry impression as the coffee cools — reminiscent of the golden era of Ethiopian Yirgacheffe. Ronal's farm sits at 1500 meters where the eastern Andes meet the Amazon; Guardian del Bosque is certified organic and farmed in harmony with the surrounding ecosystem.
