Note: this is a new roast profile, tweaked for a brighter apple body without being overpowering or one dimensional.
Edwin Noreña's green apple co-ferment runs through three distinct fermentation phases: a 24-hour anaerobic fermentation, a 48-hour carbonic maceration, and a third round fermenting collected "mossto" with added glucose and dehydrated green apple pieces for 72 hours — roughly 30% mossto mixture to 70% cherries. The coffee goes straight from tank to mechanical dryers, about as close to tank-to-roaster as it gets. Green sour candy straws forward, reminiscent of Malin+Goetz's discontinued Mojito candle.
