A beautifully expressive washed Colombian coffee from producer Jhonatan Gasca in Bruselas, Pitalito, Huila. This lot comes from Finca Zarza and features the rare Bourbon Ají variety, a newer variety circulating around Huila known for its pepper-like shape.

The cup is clean, saturated, and complex, with the clarity you expect from a thoughtful washed process and the depth that comes from carefully controlled fermentation. Ripe cherries are hand-selected, oxidized for 12 hours, depulped, then fermented underwater for 48 hours with mosto recirculation before drying under canopy for 10–12 days.
